Title: Cranberry and Vanilla Chip Cookies

Yield: 48 Servings

1/2cButter -- softened
1 1/3cSugar
2 Eggs
1 3/4cFlour
1cRolled oats
1 1/2tsBaking soda
1/2tsSalt
1cDried cranberries
2/3cWhite chocolate chips

Preheat oven to 350 degrees. Spray cookie sheets with nostick cooking spray.

In a large bowl, beat butter and sugar until will blended. Add egg; mix well. Add flour, oats, baking soda and salt; mix until well combined. Stir in cranberries and white chocolate chips. Drop dough by Tablespoonfuls 2 inches apart onto prepared baking sheets.

Bake for 9-11 minutes or until edges are golden brown. Cool 1 minute on sheets, then remove to wire racks. Store tightly covered.
